Scotland – who took their record to four wins and one defeat at the Championship – looked in control as they took a 6-0 lead.
In the sixth end Muirhead made a hit for one point and a 7-2 lead, but Germany fought back and in the tenth end it was left to the Scotland skip to executed a double take-out to run the Germans out of stones and secure an 8-5 win.
Muirhead hopes the momentum gained from the victory will carry them forward in the rest of the Championship.
She said: "We have got some momentum going forward now. That was a solid win against Germany there. We were 6-0 up and they needed to claw back and they did.
"They had seven ends to get back, so to keep a lead for that long is hard, but we managed and did well.
"When you can get off to a good start you can put the pressure on your opponent from the word go."
Elsewhere, Sweden are the only unbeaten women's team in the A-Division after they beat hosts Switzerland in a closely fought game, which ended 8-6.
Czech Republic beat Turkey 8-7 after an extra end. Skip Anna Kubeskova's team scored single points in each of the ninth, tenth and extra ends to seal the win.
While Russia beat Denmark 12-2 to notch their first win in the round-robin games with skip Anna Sidorova scoring six points.
