Trott, who had already won team pursuit and scratch gold at the 2015 event in Grenchen, took her tally to ten European titles with victory in the omnium.
It came in a successful final session for Great Britain's riders with Katie Archibald also finishing with a hat-trick of titles following individual pursuit and elimination race gold on the final day to add to her earlier triumph alongside Trott in the team pursuit.
Ciara Horne also joined her on the medal rostrum in the individual pursuit following her third-place finish as Britain finished top of the medal table once again with six gold and three bronze medals.
And Trott, who easily won the six-discipline omnium after the points race, admitted she couldn't have asked for more from the event.
"For me that's my tenth European title so I'm super happy with that," Trott said.
"It's just been great. I absolutely love the Euros. I did it from the very first one in 2010 and I've been a European champion in every one I've competed at, which I guess is quite lucky. So yeah I've really enjoyed this whole week of racing."
For Scot Archibald, it takes her tally of European titles to six following golds in 2013 and 2014.
She had qualified fastest in the individual pursuit to set up a final against France's Elise Delzenne and put in a commanding ride to defend her title by nearly five seconds.
"Pretty happy, pretty sweaty. All the things you'd expect," she said.
"I think you've got to go in imagining you're going to win. You don't imagine celebrating or anything like that but you think of the best outcome and how you can get to it."
Elsewhere, Jason Kenny and Katy Marchant both went out in the second round of the men's and women's events respectively, Matt Crampton and Vicky Williamson exited in the first round repechage of the men's and women's event while Chris Latham and Ollie Wood finished 12th in the Madison.
