It’s the Arsenal legend’s first venture into the dugout in six years following previous stints at Wycombe Wanderers, Portsmouth and Azerbaijan side Gabala.
The vacancy arrived after Granada dismissed Lucas Alcarez earlier on Monday, with Adams stepping up from his role as the club’s sporting director.
Granada’s hopes of survival are slim, with just seven games remaining to erode a seven-point deficit between them and safety.
Adams will be hoping his surprise appointment does not mirror that of former England team-mate Gary Neville, who was sacked by Valencia after a disastrous four-month spell in charge.
The 50-year-old captained Arsenal to four Premier League titles and a European Cup Winners' Cup, and won 66 caps for England.
