Ashley Hemmings had fired Daggers in to a 29th-minute lead with a screamer from 25 yards, finished off with an acrobatic celebration.
But Hitchcock netted in the 75th minute to earn Boro a hard-earned point at Victoria Road.
And his manager Sheringham, known for his exploits as a substitute, was pleased with Hitchcock's performance.
"It was good to get a goal back and get a point out of it in the end. It was a clever little finish," said Sheringham
"You've got to give credit to the ball in and the header down. It was a fantastic little header down in to the space and Tom has come and finished off.
"He's a proven goalscorer. I'm happy for him to get off the mark because he hasn't had the most game time since I brought him in.
"I thought the two strikers had done well and I want to be loyal to them. At the same time, I can see Tom's itching to play as well."
Daggers first-team coach Darren Currie, though, was disappointed Daggers did not double their advantage when they had the chance.
Jamie Cureton, who turned 40 on Friday, saw two efforts blocked off the line in the 63rd minute.
His strike partner Christian Doidge was also just inches away from grabbing a second for the hosts before Hitchcock scored.
And having conceded their lead for the second week in succession, Currie was disappointed the team are still searching for a first win.
"We had a number of chances. We were looking for that second goal just to kill the game. Unfortunately it never came," he said.
"We created a few opportunities for the second goal. At 1-0, that cliche that always is, the opposition have a chance to get back in the game."
Despite leading, Daggers looked to be defending a lot deeper during the second 45 minutes of the 1-1 draw.
It was the same story in their last match against Wycombe but Currie insists this is not intentional.
"It's not intentional or a gameplan. We play on the front foot in the first half and spent much of the game in their half. It was the same plan second half," said Currie.
"There were words said in their changing room at half time and tried to impose themselves on us a bit more.
"We didn't quite come out with the same energy and intensity. That allowed them to feel their way back in to the game."
