Scott, 24, will represent Team GB in next month's Rio 2016 Olympic Games as rugby sevens makes its debut at the top table of sporting competition.
The 12-strong Team GB squad was announced this week and Scott cannot wait to showcase her talents on the biggest stage, hopefully inspiring others to reach the heights she has.
"I used to sit at home on my sofa with my mum and dad and we'd watch the Olympics. Being a rugby player I never dreamed that could be me," Scott told BBC Essex.
"Hopefully now it's something aspiring young women rugby players can look to achieve.
"At my local club I had to play in the boy's team because there was no women's rugby team.
"That we are actually going to an Olympics is something I couldn't have dreamed of."
Scott, who plays for Thurrock Women, broke her leg earlier this year in a game against Saracens.
After five months on the sideline she will be joined in Rio by team-mate Heather Fisher and Scott paid tribute to Thurrock for the part they played in her rehab from injury.
"I wouldn't have been able to achieve what I have without their support and everything they've allowed me to go and do over the past few years," she added.
"I absolutely love it there. It is absolutely fantastic to be part of the club."
