The 23-year-old landed a flurry of trademark head shots to win 16-7, displaying fine mental fortitude to recover from a shaky second round.
"It feels unbelievable," Jones told BBC Sport afterwards. "I didn’t realise how much pressure I would feel.
"I’m still young, so to be a double Olympic champion is crazy. I’m buzzing."
Jones landed a quick-fire double head shot to fly into a 6-0 lead in the opening round, but saw her advantage disintegrate in the next as her opponent clawed it back to within a point at 7-6.
The duo exchanged points in a nervy exchange at the start of the third, before Jones rediscovered her groove with two further head shots to claim a convincing win.
