The 19-year-old crossed the line seven seconds clear of Lara van Ruijven after a dramatic crash involving the Dutch athlete, Poland's Natalia Maliszewska and Russia's Sofia Prosvirnova on the last lap.
Prosvirnova was disqualified, allowing Maliszewska to sneak bronze but the day belonged to Hungary's Jaszpati.
"It was my first (individual) A final of the season and I did pretty good yesterday in the (1500m) B also, so I wanted to just enjoy it and it happened and it was really good," she said.
"I want to train even harder to have this feeling more often."
In the men's 500m final, Samuel Girard claimed victory ahead of Hungary's Shaoang Lui and Kazakhstan's Abzal Azhgaliyev.
Elsewhere, there was double joy for Korea in the 1500m as Jeong Min Choi took victory in the women's race and Woo Gun Kim won the men's.
Canada held off Korea and China to claim the 2000m mixed relay title, while the Netherlands won the 3000m ladies relay by less than two tenths of second from Korea, with Canada third.
The Netherlands also won the men's 5000m relay, ahead of Canada and China.
