Doherty took the first frame with a break of 61, but Ding responded with a half-century of his own to level the match and set a pattern for the opening eight frames.
But with the scores at 4-4, the world number 11 Ding finally pulled ahead for the first time and proceeded to make an impressive clearance of 64 to claim the title in the third World Series event of the season.
Earlier in the day, Doherty reached the final courtesy of a 5-3 defeat of Mark Selby, in which the Irishman raced into a 3-0 lead only to be pegged back to 3-3.
Selby's recovery included a fine break of 102, but Doherty took a tight seventh frame and made a clearance of 79 to close out the match.
In the other semi-final, Ding routed Steve Davis 5-1 with a commanding performance in which he made four half-centuries and a century to finish.
