Roofe took his tally for the season to eight with strikes in the 41st and 53rd minutes, fellow striker Ryan Taylor having a hand in both. Swindon had earlier had Jordan Turnbull sent off.
Appleton said: "They were good poacher's finishes, especially the second one.
"It was a good game, a little bit toe-to-toe for a while while the teams tried to work each other out.
"Once the Swindon player was sent off we took charge. I thought our attacking play down the wings was terrific, with Roofe applying the finishes in the middle.
"I would have liked us to have scored a third or a fourth, but I did really enjoy watching us tonight.
"We had 9,000 here to watch and they created a fantastic atmosphere. I would like to think 1,000 to 2,000 who saw us tonight and enjoyed watching that might come back on Saturday when we have another really big game in the league."
Swindon manager Mark Cooper, not impressed with centre-half Turnbull following his first-half red card, was concerned for Bradley Barry, who had to be taken off on a stretcher in the second half with a head injury and was taken to the John Radcliffe Hospital in Oxford.
"We think he got a head on the back of his head and it's knocked him out. He's not in a good shape," he said.
"The boys that stayed on the pitch till the end put in a fantastic shift for us.
"In the first half we were in complete control and in the first 30 minutes we played with real pace and flair.
"But if you lose your discipline it costs you, and Jordan has cost us the game today.
"We've got so many out injured now, though, we've got to do something to get some reinforcements and I'm sure the chairman will be thinking about that."
