Pellissier took home the match ball with three breakaway goals in a game that the Bianconeri dominated from start to finish.
It had seemed that the hosts had done enough to win when, inspired by substitute Mauro Camoranesi, they came from behind to lead 3-2 entering the latter stages of the match.
Argentine-born Italy winger Camoranesi set up all three goals for his side after he came on for the injured Hasan Salihamidzic midway through the first half
Pellissier grabbed a first-half brace for the visitors but strikes from Giorgio Chiellini and Vincenzo Iaquinta sandwiched a Santiago Morero and Mario Yepes combination own-goal to put Juve 3-2 up as added-time approached.
Juventus had more of the ball and created more of the chances but they were wasteful both from open play and set-pieces, with Alessandro Del Piero particularly profligate from free-kicks just outside the area.
Chievo, meanwhile, were content to defend deep and hit the Bianconeri on the break - a smart tactic given Pellissier's pace relative to the bulky Juve back-line.
Pellissier opened the scoring on 26 minutes, racing on to a ball down the left that Chiellini inexplicably let roll past him and rounding Gianluigi Buffon before finishing low into the bottom right from an acute angle.
It had come against the run of play but Juve had not created any clear-cut chances.
The enforced introduction of Camoranesi gave the Bianconeri more width going forward and the Italy winger had an immediate effect.
First he won a corner with a good cross from the right and, after Chievo failed to clear their lines, he flicked the ball back into the danger area where Chiellini was on hand to lash a left-foot volley in off the bar, atoning for his earlier sluggishness.
But Chievo again stunned Juve on the break when, faced with Olof Mellberg in an almost identical play to the opener, Pellissier sprinted clear and finished low past Buffon.
Claudio Ranieri took a huge gamble by using up his substitutions on half-time, introducing David Trezeguet for Del Piero and Jonathan Zebina at right-back to add some pace and physicality to his side - and it worked.
Combined with the flair and pace of Camoranesi, Juve hit Chievo with wave after wave of attacks and they levelled when, on 53 minutes, Morero and Yepes combined to put past their own keeper after Camoranesi headed a far-post cross by Christian Molinaro low towards goal.
Stefano Sorrentino kept his side in the match with excellent saves from Vincenzo Iaquinta and Trezeguet.
The former France striker put Iaquinta's left-wing drag-back inches wide of the far post and Chiellini sent a good chance wide from close range after the ball dropped to him following a defensive mix-up.
The Flying Donkeys were holding on now and Juve's pressure told when, with 11 minutes remaining, Camoranesi found space on the right-hand side of the penalty area to dig out a superb hanging cross that Iaquinta met with a far-post header that looped past Sorrentino and nestled in the bottom right.
Domenico Di Carlo's side seemed to have run out of ideas but another tactical decision paid off for Chievo this time, when sub Antonio Langella was brought on for Michele Marcolini.
Langella raced down the left wing and his far-post cross was met by the head of Pellissier, who had sneaked in at the far post to power the ball past Buffon and earn his side a point.
Genoa kept their noses in front in the race for fourth place and the final Champions League qualification position as a late goal from Brazilian Thiago Motta earned them a 1-0 win at rock-bottom Reggina.
Fiorentina kept on Genoa's heels, just two points behind, as Alberto Gilardino scored a winner a minute from time in a 2-1 success at 10-man Atalanta.
Atalanta had led 1-0 through substitute Gianvinto Plasmati's deflected strike four minutes into the second period but the dismissal of Federico Peluso on 57 minutes proved not only harsh but also decisive.
Peluso tripped Gilardino in the box as the former Milan striker was bearing down on goal with only goalkeeper Andrea Consigli to beat.
The referee deemed Peluso to be the last man and showed him the red card with Montenegro midfielder Stevan Jovetic slotting home the penalty despite a touch from Consigli.
Fiorentina continued to toil looking for a winner until the last minute when Gilardino got in front of his man at the near post to flick home Serbian midfielder Zdravko Kuzmanovic's right wing cross from close range.
Sixth-placed Roma are three further back after two contentious penalties from Francesco Totti sealed a 2-1 home win over fourth-bottom Bologna.
Torino remain two behind Bologna after losing 1-0 at Palermo.
