Taft becomes Albion's first new arrival this summer, putting pen to paper on a two-year contract having recently been released by Leicester.
The 20-year-old centre-half, who can also play at left-back, came through the Foxes' academy and has represented England at Under-19 level.
He never made a first-team appearance for Leicester although he did spend time on loan with Kettering, Swedish side Karlstad BK and Burton Sky Bet League Two rivals York.
"George is a player we've been watching for a while, and we're pleased to have him on board," said Albion boss Gary Rowett.
"He brings a lot of height to the team, something that we probably lacked a bit last season and we're confident he can give us something a little bit different going into next season."
Meanwhile, Chris Hussey has left the club after both parties mutually agreed to waive his contract extension.
The 25-year-old was this week one of eight players to agree a new deal but now the versatile left-sided player will become a free agent.
Hussey made 36 appearances during his stay at the Pirelli Stadium and last season had a loan spell with Bury.
