No details have been given about the incident leading to the decision, with Celta's website simply confirming Orellana is "not on the list" of players selected for Wednesday's Copa del Rey tie against Real Madrid.
But in comments reported by Marca, Berizzo said: "I have decided not to use Orellana, a decision which is based on an unacceptable lack of respect.
"I have communicated my decision to the club and we have decided to remove him from the team. From now on, the club will defend its interests.
"We want there to be discipline and will not tolerate any lack of respect."
Celta sporting director Felipe Minambres added that the club will look to sell Orellana during this month's transfer window, adding: "We believe we will receive offers for Orellana because he is a great player and we are already working on a replacement."
Orellana told Chilean news outlet Emol: "This is not the manner to leave Celta. I would be sad to leave the city and the team."
The 30-year-old accused Berizzo of being "disloyal" and added: "This is not the first time Berizzo has had problems with a player. Something so small has become something so big. It was something personal."
Earlier this season, defender Gustavo Cabral was suspended for a week by Berizzo having also been accused of disrespect.
