The Brit went 6-2 6-4 down before fighting back to claim the third set 7-5.
Norrie dug deep to give the 15th seed some trouble in the fourth set, but Pouille defended Norrie's set point at 5-4 to hold his serve and take control of the game once more.
Norrie found another lifeline as he broke shortly afterwards to take the fourth set to a tie-break.
Norrie looked to be unravelling in the tie-break as frustrations began to show, and it was the Frenchman who was the first past the post to win the tie-break 7-3 and the match 6-2 6-4 5-7 7-6.
