"Everything has moved very fast in the last few days," Sammer, 36, told reporters in the southern city of Stuttgart.
"I will try and continue Magath's good work in Stuttgart. The outlook is one with a young, hungry team with old leaders."
Sammer played for Stuttgart when they won the Bundesliga title in 1992 and scored 20 goals for the club between 1990 and 1992.
Unlike Magath, who has agreed to replace Ottmar Hitzfeld at Bayern after three years in Stuttgart, Sammer will not take on the roles of both coach and manager but will just focus on coaching.
Stuttgart finished fourth in the Bundesliga the season just finished and will play in the UEFA Cup next season.
Borussia Dortmund announced they were parting company with Sammer on Sunday after a disappointing season. The club finished sixth in the Bundesliga, narrowly missing out on a UEFA Cup spot.
Sammer had been at Dortmund since 1993 and played in the side who won the European Cup in 1997. He became the Dortmund coach in 2000 and guided the Ruhr Valley club to the Bundesliga title in 2002.
The club said they were likely to name a successor this week and Dutchman Bert van Marwijk, whose contract at Feyenoord runs out at the end of the season, among the favourites for the job.
